Ingredients
  • 4 Medium Sized Potatoes
  • 1/2 Onion
  • 1/2 Freshly Squeezed Lemon Juice
  • 1 tbls Balsamic Vinegar
  • 1/2 Cup Coconut Milk
  • 3 Cloves of Garlic
  • 2 tbls Olive Oil
  • 1 tsp Onion Powder
  • Salt and Pepper to taste
  • Chives or Green Onion to taste
Instructions
  1. Peel and slice the potatoes and place them in a medium sized pot to boil.


  2. In a pan, place the olive oil, onion, and the garlic and have them sauté for 10 minutes. Make sure the onion is chopped very fine.


  3. Once the onions and garlic are lightly sautéed, add in the balsamic vinegar. Mix it all together and have them sauté until they are lightly brown for another 5-6 minutes.


  4. To know if the potatoes are done cooking, take a fork and if they are soft enough for the fork to poke through them they are ready to go. Once they are ready to go, drain the water out. Grab a potato masher and mash them all up.


  5. Add in the coconut milk, lemon juice from a squeezed lemon, onion powder, salt and pepper.


  6. Stir it all up until it is light and fluffy


  7. When you are ready to serve add the choice of chives or green onions. I used green onions this time.
