Ingredients
  • 4 Cups Water
  • 2 Cups Black Rice
  • 1 Green Onion
  • 1/2 Cup Feta Cheese
  • 1/2 Cup Corn
  • 1/2 Cup Chopped Carrots
  • 1/2 Cup Chopped Bell Pepper
  • 1/4 Chopped White Onion
  • 2 tbls Olive Oil
  • Salt and Pepper to Taste
Instructions
  1. Put 4 cups of water to boil. Once boiled add in the rice and let it simmer for 45 minutes. Make sure to stir it every 5 minutes.


  2. In a separate pan cook the vegetables and white onion on medium-low. Add in the olive oil, salt and pepper to taste. Cook for 15 minutes.


  3. Once the vegetables are done mix it in with the rice and add in salt and pepper to taste.


  4. Top off the dish with green onion and feta cheese


  5. Serve and enjoy 

Recipe Notes

Make sure there is a 2:1 cups of water to cups of rice ratio for this recipe.
