Easter is just a short week away and I have already started baking all of the yummy treats! When it comes to any holiday season, you can be sure to catch me in the kitchen with my thinking cap on creating new and delicious recipes for the festive season. I can’t help it but bake like a mad lady! The easter season consists of some of my favourite chocolates especially Cadbury mini eggs 😍. I love the candy coating around them and the creamy milk chocolate underneath! I mean common, I’ve never met someone who doesn’t love a good Cadbury chocolate egg 😍. This year I decided to make a cookie cake. Usually I made them with chocolate chips but for the sake of Easter I decided to load it up with some mini eggs! This was my first time baking this dessert, and I’m not going to lie but I did not expect the candy coating to crack… kind of disappointed when I took it out of the oven! BUT it still tastes delicious and gives it more if a rustic effect. Now, when I sent this around the table for a taste test, no one commented on the look of it, instead the whole family thought it was so yummy! This means it was an A+ and a definite go for easter! Gavin is already bugging me to make more of this cake for him! He just can’t get enough 😂.
- 2 1/2 Cup Flour
- 1 tsp Baking Soda
- 2 tsp Baking Powder
- 2 Large Eggs
- 1 Cup Butter
- 1 Cup Brown Sugar
- 1/2 Cup White Sugar
- 1 tsp Vanilla
- 1 tsp Salt
- Cadbury Mini Eggs

Preheat the oven to 350°F

Mix in the dry ingredients, flour, salt, and baking soda & baking powder into a separate bowl

Mix in the butter with the sugars until fluffy in the blender. Slowly add in the eggs one at a time and then add in the vanilla extract.

Slowly add in the dry ingredients into the blender. Once all the ingredients are added split the dough into two and and flatten it into two separate 8 inch pans.

Once all the dough is flattened place the mini eggs on top and spread it all around.

Place it under the oven for 25-30 minutes until the top is golden brown

Once it is done, place the cookie cake on a cooling rack for 5 minutes until serving.
