Even though it’s the springtime, it’s always a good time for Apple Cinnamon Spice Muffins! My favourite desserts consist of anything with cinnamon and apple. Last Thanksgiving I made my famous homemade gingerbread crusted apple pie…it was to die for! The next recipe I want to give a try is Joyous Healths Apple Spice Pancakes. They look so delicious and are the perfect addition to your weekend brunch! The flavours of apple and cinnamon go together deliciously!
Even though these muffins are more of a ‘fall-like’ dessert, there is no rule saying you can’t have a certain type of dessert, during a specific time of the year! A craving is a craving after all! I will eat ice cream all year long. Ice cream is my weakness for a dessert. You can just ask Gavin, I go crazy for ice cream! I’ll even have a hot chocolate in the summertime. It may be weird but my body craves certain flavours and you just have to go with it! That being said, peppermint bark in June anyone? 😜
The other day in the kitchen I was craving a brown sugared muffin dessert. I put my thinking cap on and decided to raid my kitchen to see what I could put together last minute for a tasty recipe! I find the best way to make your own DIY recipes is to just see what you have in your kitchen cupboards and mix and match different flavours to see what you like!
My favourite part of this recipe are the chunks of fresh apples that are in each muffin. I love taking a bite that has some fresh apple chunks in it! It’s my favourite part of any dessert! The crispy apple cinnamon crumble on the top is so delicious and tasty, each bite will have you wanting more! This recipe also has a bit of a caramel flavouring to it as well because I added caramel extract instead of vanilla. The number one reason why I chose that instead is because I simply ran out of vanilla extract, and I am so happy I did! I find the caramel flavour is really able to complement the taste of the apple and the cinnamon a lot better. It allows the flavours pop in a more tasteful way!
- 3 tbls Brown Sugar
- 3/4 Cup All purpose Flour
- 1 tsp Cinnamon
- Pinch of Salt
- 6 tbls Unsalted Melted Butter
- 1 Apple peeled and chopped
- 3/4 Cups White Sugar
- 2 1/2 Cups White Flour
- 2 tsp Baking Powder
- 2 tsp Cinnamon
- 1/2 tsp Nutmeg
- 2 Eggs
- 1/4 Cup Melted Butter
- 1/2 Cup Vegetable Oil
- 3/4 Cup Milk
- 2 tsp Caramel Extract
- 1 Cup Powdered Sugar
- 2 tbls Milk

Preheat the oven to 425°F.

Add cupcake cups to the muffin tray or spray non-stick grease to the pans

Make the crumb topping - in a small bowl mix brown sugar, flour, cinnamon and salt. Drizzle the melted butter over everything and stir until everything is combined and clumping together. Set aside.

In a large bowl, whisk together the flour, baking powder, salt and cinnamon. In another bowl, whisk together the sugar, eggs, melted butter and oil until well combined. Add the milk and caramel and whisk until combined. Add this mixture to the flour mixture and stir until just combined.

Add the apples, folding in gently, until just combined.

Scoop the muffin batter into the prepared muffin tin, dividing it between the 12 muffin cups. They should be almost full. Top the muffins with crumb topping, dividing the mixture between the 12 muffin cups.

Bake for 17-20 minutes, or until a toothpick inserted in the centre of a muffin comes out clean. Allow the muffins to cool for 5-10 minutes in the muffin tin, and then remove them to a wire rack to cool completely.

In a small bowl, whisk together the powdered sugar and milk until smooth to make the glaze. Drizzle the glaze over top of the cooled muffins.
