Are you an avocado lover? Is guacamole a weakness for you? I’m with you sister! I can’t get enough of this stuff myself. Guacamole is delicious with nachos, in tacos, on chicken and tofu, or absolutely anything! My recipe for guacamole is creamy and delicious and 100% healthy! 🙂 How can you say no to that?!
Guacamole is defiantly on my cheat food for myself, not for the guacamole its self but mainly because I LOVE to pair it with nachos! Its the perfect snack to have on a Friday evening after a long hard week at work or school. Everyone deserves a yummy treat to indulge themselves with and the best part about this recipe is it’s so healthy. This Mexican inspired dish will defiantly have you screaming for more. I love adding chunks of tomatoes in my guacamole, so the more tomatoes I can add the better. It just makes the dip a lot more juicier. Its probably the Italian in me that allows me to appreciate and crave the taste of tomatoes. I remember growing up in the summer time as a child and walking into my grandfathers garden to grab a fresh tomato and taking a big bite into it like an apple. Its the best way to enjoy a tomato. So juicy and delicious and perfect for a hot summers day 🙂 !
The main ingredient in guacamole, if you don’t already know, is avocados! We always hear that avocados are good for us and beneficial to are health but do we know exactly HOW they are good for us? Well let me share that information with you! According to my sources avocados are rich in:
- B vitamins
- Vitamins C, K and E
- Natural plant chemicals that may help prevent cancer.
- Monounsaturated Fatty Acids
- Fiber
- Potassium ( There is more potassium in a avocado than a banana!)
This list is to only name  a few of the healthy benefits of avocados. Your probably looking at this list and thinking “Is fat really listed there as a benefit”? Yes the fat in avocados is a heart healthy fat, BUT everything needs to be considered in moderation. The fat found in avocados is oleic acid. This type of fatty acid is also found in olive oil. Oleic acid is a fatty acid that is found naturally in various animal and vegetable fats and oils.  It is linked to help reduce inflammation and have beneficial effects on genes linked to cancer!
In my recipe I used a food processor to mix my avocados. You can simply use a fork or a whisk to mix all the ingredients but I love the creamy and smooth texture the food processor creates for my guacamole.

- 4 Ripe Avocados
- 1/2 Freshly Squeezed Lemon
- 1 Tomato
- 1/2 Red Onion
- 1/2 tsp Garlic Powder
- 2/3 tsp Salt
- 1/2 tsp Pepper

Spoon out the avocados from the peal and remove the pit before adding them into the food processor. Add in the half of lemon juice. Blend until the mixture is smooth and creamy.

Chop up the onion and the tomato and place them in a separate bowl.

Once the avocado's are blended add the creamy mixture into the separate bowl with the chopped up onions and tomato. add in the garlic powder, salt and pepper and stir it with a spatula.

Serve with fresh nachos.
