The night has finally arrived for the big man in red to come down everyones chimney and layout all the presents for the good boys and girls. I remember as a child always putting out the milk and cookies for Santa, and of course carrots for the reindeer. I remember one year we were laying out cookies for Santa before we headed up to bed and as we were getting everything ready for Santa we heard something on the roof. Now as a kid we believed everything, so what was actually a racoon on our roof, our parents convinced us it was Santa and his reindeer! My siblings and I never ran up to bed so fast! We thought if Santa caught us out of bed we would never get our presents! Luckily for us my parents caught it all on video so we can always rewatch that moment! 😂
The traditional cookies every kid puts out for Santa are chocolate chip cookies, this year I decided to share my recipe for ginger molasses cookies! They are soft and chewy and delicious. Scroll down for the recipe 🙂
- 2 1/2 Cups Flour
- 1/2 tsp Salt
- 2 tsp Baking Soda
- 1 1/2 Stick Unsalted Butter
- 1/2 tsp All Spice
- 1 tsp Cinnamon
- 1/2 tsp Cloves
- 1/2 tsp Ginger
- 1/2 tsp Ground Pepper
- 1/2 tsp Salt
- 1/2 Cup Light Brown Sugar
- 6 tbsp Molasses
- 1 Egg
- 1/2 Cup Sugar

Preheat oven to 350 degrees

Line two baking sheets with parchment paper

In a medium bowl, whisk together flour, baking soda, salt, ginger, allspice, and pepper.

With an electric mixer, cream butter, brown sugar, and 1/2 cup granulated sugar until light and fluffy. Beat in molasses and egg. With mixer on low, gradually beat in flour mixture until just combined.

Divide dough into twelve 2-inch balls. Place tough at least 4 inches apart on prepared baking sheets. Flatten into 3-inch rounds. Sprinkle with sugar remaining in bowl.

Bake until brown, rotating sheets halfway through, 12 to 15 minutes. Cool cookies on a wire rack.
