Well look at that, the weekend is finally here! I don’t know about you but this week has been very long and very tiring. Maybe it has something to do with the time change that happened last weekend. Now that the days are shorter and it gets dark really early now, I tend to get more lethargic. Is that just me? Am I going crazy and just having “one of my weeks”. Alrighty, so you all know I am quite fond of baking. Baking is an activity that calms me down and is soothing. I can easily put on some music or Netflix in the background and just bake away! I am so excited that Christmas is around the corner! I always LOVE baking and dancing to Christmas music in the kitchen! I know Gavin sure loves it, he gets to eat all the yummy treats!
For today’s post I tried baking donuts for the first time. They were so cute! I wanted to keep making more batches. I could have gone with the simple chocolate or vanilla flavour but I decided to side it up a bit and make more of a fall dessert by using different spices like cinnamon, ginger and nutmeg. Plus, who doesn’t love a good carrot cake with cream cheese frosting. Is your mouth drooling yet? 😂 I made these donuts specifically for my friends last weekend. Gavin and his roommates had a 90s theme party. They were a hit and everyone loved them! Phew! The first time with a new recipe and dessert was a success!

- 2 Cups Flour
- 2 tsp Baking Powder
- 1 1/2 tsp Cinnamon
- 1/2 tsp Ginger
- 1/2 tsp Salt
- 1/2 tsp All Spice
- 3/4 Cup Brown Sugar
- 2 Eggs
- 2 tsp Vanilla Extract
- 2/3 Cup Buttermilk
- 4 tbls Butter
- 3/4 Cup Shredded Carrot
- 1/2 Cup Walnuts
- 4 ounces Cream Cheese
- 2 Cups Powdered Sugar
- 1/4 Cup Milk
- Sprinkles

Preheat the oven to 350°F. Make sure to spray the donut tray, or rub butter around the edges so that the dough doesn't stick to the pan

In a large mixing bowl, mix together the try ingredients. Flour, baking powder, salt, cinnamon, ginger, and all spice. Set the bowl aside

In a separate mixing bowl, mix together the butter, buttermilk, brown sugar, egg, and vanilla until fully combined.

Add the dry ingredients to the wet ingredients and mix until just combined. Add the grated carrots and gently mix them into the batter.
Spoon the batter into each cavity of the donut. I used a piping bag because it was easier to place the dough in the pans neatly.

Bake for about 10 minutes at 350°F or until a wooden toothpick inserted into the donut comes out clean. Remove from the oven and cool in the pan for about 5 minutes. Remove the donuts from the pan and transfer to a wire rack to finish cooling.

In a mixing bowl, using an electric mixer, beat the cream cheese, powdered sugar, and milk.
Frost the cooled donuts and decorate as desired.
