As a kid, waking up on a Saturday morning and smelling mom making pancakes in the kitchen would probably be one of the only things able to get me out of bed in the morning. I love pancakes and while the traditional Aunt Jemima pancake mix to die for, it is loaded with carbohydrates and can be quite heavy for some of us first thing in the morning. When I found out that you did not need to add flour to your pancake mix i was very intrigued! This recipe I have for you is delicious, healthy, and helps to boots your metabolism with this one super ingredient. Scroll down to find out!
- 1 Banana
- 2 Eggs
- 1 tsp Ground Flaxseed
- 1/2 Cup Blueberries
- 1 tsp Cinnamon
- 2 tbla Coconut Oil

Step 1: Slice the banana into pieces

Step 2: Crush the banana and mix it in with the eggs

Step 3: add in the blueberries, flaxseed, and cinnamon

Step 4: Place a frying pan to a low-medium simmer. Add some coconut oil so it doesn't stick.One thing to remember, these aren't as dense as regular pancakes, so be careful flipping them so they do not break.

** You can add any ingredient to change up your flavor such as chocolate chips or strawberries. Also using cinnamon is a great way to spice up your morning breakfast! It helps regulate your blood sugar levels and gives your metabolism a boost in the morning.
