Well hello there and welcome back to my blog!
Today I and sharing with you my delicious homemade vegan burger recipe! One of my favourite flavours are sweet potatoes. Now that the fall season is close by I will be creating a whole bunch more recipes. Yum Yum I can’t wait!
I have been craving a veggie burger for the longest time! Poor Gavin has had to hear me rant about my cravings for some time now. With busy schedules its never easy to find time to go out and grab one! This past weekend I finally had time for myself and decided to whip up a batch myself. I have made veggie burgers in the past but I will have to admit these are by far my favourite ones! They are full of flavour and the texture is amazing.
Baking and creating recipes when you are starving is the best! You are craving so many delicious flavours and get to experiment which flavours compliment and work well each other! I love fresh guacamole and I knew that this needed to be one of my flavours to add to my burger. You can find my homemade guacamole recipe by clicking here.
Before we move on to the recipe I will share with you one tip for being creative with creating your own burger. To start off you need a binding product. In my case, I used sweet potatoes and chickpeas. I have made burgers before that did not have a lot of binding ingredients or I added too much water, and the burgers did not come out great and turned into crumbs. If you are planing on making your own and using different ingredients, make sure you have products that help bind your burger together. 🙂
Mix all of your ingredients together in the food processor then lay them on the baking sheet.
While those burgers are cooking, start whipping up some delicious toppings. Over here I am making my homemade guacamole. Check out the recipe by clicking here.
Place all of your toppings together and dig in!
- 2 Whole Sweet Potatoes
- 1 Can Chickpeas
- 1 Cup Cooked Quinoa
- 1 Cup Spinach
- 1/2 Cup White Onion
- 2 Tsp Cumin
- Salt & Pepper to Taste
- 1 Tsp Paprika
- 1 Tsp Garlic Powder
- Sliced Tomato
- Guacamole
- Alfalfa Sprouts
- Lettuce
- Sautéed Onions
-
Preheat the oven to 400°F.
-
Peel and slice the sweet potatoes and put them to steam until they are soft enough to poke a fork through them
-
In another pot put water to boil to cook the quinoa. I generally use a 2:1 cup of water to quinoa ratio.
-
Drain and wash a can of chickpeas
-
Once these three ingredients are ready to go, place them in a food processor. Add the onion, spinach, and spices into the mix and grind all of the ingredients together.
-
Once all the ingredients are mixed place some parchment paper in a pan. Roll your burgers into the size you want. I rolled mine into the size of a tennis ball and them flattened them to my desired size.
-
Bake them for 35-40 minutes rotating half way through.
-
While the burgers are baking, you have time to make your toppings if need be such as guacamole and sautéed onions.
