When it comes to sweets I have the biggest sweet tooth around, especially when it comes to chocolate. Growing up I was always a baker so when I had a craving for chocolate cake and cookies it was easy for me to whip up a batch for myself. When it comes to desserts, I am always finding an excuse to bake cookies. I’ve made cookie cakes and even themes heart-shaped cookies for Valentine’s day. My favourite chocolate espresso cookies are the easiest cookies to make and taste delicious!
What really makes these cookies special is the contrasting flavour between the cocoa and the espresso. By mixing these two flavours together with the semi-sweet chocolate chips, well it’s like a party in your mouth! I love trying out new recipes and one of my favourite places to browse through for new recipes is Pinterest. One time I was on Pinterest for hours straight just drooling over so many different food recipes.
Scroll down to the bottom to check out the recipe. These cookies are very easy to make and do not require a lot of work at all. If you want to make this recipe for a party or a gathering, feel free to double the recipe. I like to make my cookies bite size and in one batch you can make a few dozen.
- 1/3 Cup Baking cocoa, dark
- 3/4 tsp Baking soda
- 1/2 Cup Brown sugar, dark
- 3/4 Cup Dark chocolate chips
- 1 3/4 Cup Flour, white
- 1/4 tsp Salt
- 1 tsp Vanilla
- 1/2 Cup White Sugar
- 1/2 Cup Butter, unsalted
- 1 tbsp Espresso, instant powder
- 2 Eggs

Preheat your oven to 350 F (175 C) and line several cookie sheets with parchment paper. In the bowl of a stand mixer fitted with the whisk attachment beat the sugars and melted butter for 1-2 minutes.

Add the eggs, vanilla and espresso powder and whip together.

Mix in the flour, cocoa powder, baking soda and salt until combined. Stir in the chocolate chips.

Scoop with a medium cookie scoop onto your trays about 2 inches apart. Bake for 11 mins and cool on a wire rack.

Store in an airtight container at room temperature.
